There’s nothing quite like a good rum cocktail to put you in that tropical state of mind, no matter where you are in the world. On the weekends I love to experiment with different ingredients to make healthy and delicious cocktails. Most of them involve my Vitamix because I love frozen drinks and you can blend in whole veggies and fruits. BUT due to power output differences between the U.S. and the Netherlands I can’t use my beloved Vitamix [insert waterfall tears emoji]. I’m going to have to figure that one out pretty soon because I’m really missing my daily fresh green juices!

So anyway, this delicious cocktail is not frozen but is instead served over ice. Rum punch is quick, easy, and fun for parties but usually has some questionable ingredients (aka canned pineapple juice, orange juice full of preservatives, and grenadine). And grenadine is pretty much just sugar and artificial red food dye. Gross.

My version is just as tasty, has no added sugar, no preservatives, and no artificial food dyes! I use all fresh juices, coconut water, and fresh lime juice. And to get the pretty red-pink color I use beet juice! Don’t worry, the beet juice doesn’t change the taste at all. If you don’t feel like making beet juice you can always leave it out. You’ll just end up with an orange-yellow color instead. But it’s so much more fun with that authentic rum punch red color, don’t you think?

To make the beet juice there are a few options: 1) blend cooked beets in a blender then strain with cheese cloth, 2) use a juicer to juice raw beets, 3) use the juice from packaged cooked beets (ex: Love Beets brand), or 4) use a garlic press to squeeze the juice from small chunks of raw or cooked beets.

Try this recipe at your next cocktail party and I promise your friends will keep coming back for more. And if it’s a Tuesday and you just want a sweet treat, simply divide the recipe by 8 to make a single serving just for you!

    Ingredients 

    • 2 cups freshly squeezed orange juice
    • 2 cups fresh pineapple juice
    • 1 cup coconut water
    • 1 1/2 cups high quality white rum
    • 4 tsp fresh lime juice
    • 4 tsp beet juice optional

    Instructions

    • Pour all ingredients into a large pitcher.
    • Stir to mix.
    • Add ice & serve!
